The festival of lights is only a few weeks away and one should start with all the annual Diwali preparation. Diwali celebrations are about three things, good company, games and delicious food! With Diwali’s awaited arrival, one thing people look forward to is getting to eat delicious sweets the entire festive season. Your Diwali dawat can be managed without good games or company but not without sugary mithais!

If there was one Indian sweet with practically no haters, it would be Kaju Katli! It is a popular Indian sweet or barfi recipe made with cashew nuts or kaju and sugar syrup for binding and shaping the sweet. This diamond-shaped barfi comes decorated with edible silver foil, vark, giving it a rich appearance. Kaju Katli or Kaju Barfi is a premium Indian dessert loved and adored by all. This Diwali, learn how to make your very own Kaju Katli at home!

Kaju Katli Recipe

Kaju Katli Recipe Ingredients

  • 2 cups kaju/cashew
  • 1 cup sugar
  • ½ cup water
  • 1 tsp ghee/clarified butter
  • ¼ tsp cardamom powder

How to make Kaju Katli

  • To make Kaju Katli at home, firstly in a mixi take 2 cups cashews and blend to a fine powder. Make sure to pulse and blend otherwise the cashew will release oil and turn into a paste.

  • Sieve the cashew powder making sure there are no lumps and keep it aside.

  • Take a large kadai, add 1 cup sugar and ½ cup water.

  • Stir this mixture well and let the sugar dissolve. Boil this for 5 minutes or until 1 string consistency is attained.

  • Add in powdered cashews and mix well.

  • Now stir this continuously until the mixture is well combined and forms a smooth paste.

  • Next, add 1 tsp ghee and ¼ tsp cardamom powder. Mix this well.

  • Continue to cook until the mixture turns smooth paste and starts to separate pan slightly. Do not overcook this mix, as the burfi will turn too hard.

  • Take a piece of butter paper and grease it with ghee. Transfer the mixture onto this butter paper.

  • Now fold using a spatula until the mixture thickens forming a dough. Once the dough is formed, knead slightly, to form a soft dough.

  • Take your cashew dough, place it between butter paper and start to roll it using a rolling pin.

  • Roll this dough slightly thick while making sure it stays uniform.

  • Now grease this with ghee and apply silver leaf or silver vark. (Applying silver vark is optional)

  • Start cutting them into diamond shapes or any other shape of your choice.

Finally, your Kaju Katli is ready to be served for Diwali! Store these Kaju Katli sweets in an airtight container and enjoy for a month.
