Ingredients:
- Assorted seasonal vegetables (pumpkin, brinjal, potatoes, carrots, beans, etc.)
- Oil or ghee
- Cumin seeds, asafoetida, green chillies, ginger, turmeric powder, red chilli powder
- Coriander powder, garam masala, and salt
- Fresh coriander for garnish

- Wash all the vegetables and dice them properly.
- Take a large pan and add oil to it.
- Now add cumin seeds, hing, green chillies, and ginger.
- Add spices such as turmeric, red chilli powder, and salt while cooking.
